¨ Chunks
A good bag of charcoal ideally contains more than 80% of 40-140 mm calibre pieces. Small-gauge charcoal is more difficult to light: less air circulates between the pieces. Combustion is often less efficient.
¨ High fixed carbon content
Ideally, charcoal should have a fixed carbon content of between 80% and 82%. Below 78%, charcoal burns too quickly. Above 86%, charcoal is difficult to light.
¨ Easy lighting
Thanks to rigorous controls during the decarbonization process, the charcoal’s moisture content is minimized to the maximum, thus facilitating ignition.
¨ Long combustion time, high heat release
The cooking temperature is estimated at between 300° and 400°. Grill O’Bois “Restaurant Quality” charcoal generally maintains an ember at this temperature for 65 to 75 minutes.
♦ Little dust and braisettes
In a bag, the maximum level of dustand braisettes (pieces of less than length) is 10%.
